Papaya Slaw
Blend a cool, sweet tropical fruit with the fire of red chiles and

papayas, peeled and julienned |

red finger chile pepper, seeded, veined, and finely chopped |

tablespoon chopped cilantro |

clove garlic, minced |
In a medium bowl combine lime juice, bean paste, sugar, and salt; mix
well. Add papaya, chile pepper, cilantro, and garlic; toss to combine.
Cover and refrigerate for 2 to 4 hours. Serve cold.
Makes 4 servings.
